Every day my chins get fresh pellets, hay and water, I use bottles.
I find pellets will take the moisture from the air and the chins will not eat when stale or damp.
I know about how much each eats and if the dish is empty during nightly cleaning I'll add a tad more, if their is some left it gets tossed, and a tad less given.
Hay they get more than they need, but it too will get dumped, as they tend to throw it all over the cage and pee on it.
I also remove their pee spot every night, and do a complete clean every week.
I alternate so every night a couple of cages get a complete.
Just like the chins I find a good routine is essential

I think once a day is best.... Iam able to monitor how much they are eating this way.  I always put a measured amount in the bowl (1/8 cup).  It's also easiest this way because you can do everything all at once (food water hay oats) and you don't forget anything.

I feed my chinnies fresh hay and pellets every evening when I get home from work, I usually have to refill their hay in the morning too.

Every night I throw out the old food and hay, wash the food bowl and put new food in and fill up the hay.

my chins eat all day during the day

I have never done the 1/2 cup or wat evre size you feed them on andy of my pets especially when I have more than 1 cause I am never sure if they are both getting the same or required amount or if one gobbles it up and the other starves and my hay is in the hopper and I do change my water and give them fresh every day filtered cause if my water from the spout sits it gets a tiny smell and doesn't taste as good

My chins get pellets every evening as well as hay and fresh water.  In the morning they usually get more hay and fresh water.  I want my water fresh so I give them fresh too .

We're feeding him a mix of chinchilla pellets and guinea pig food, the only problem is that he eats all the guinea pig food and leaves the pellets, so we think the best thing to do is leave the pellets in there another day before we change his food so that he has to eat them and gets the proper nutrition. I don't know if you would agree with this. Any comments would be welcome. He gets lots and lots of hay for eating and bedding which gets changed one a week unless he soils it and treats on a sunday so we know we're not giving him too many.

What brand of chinchilla pellets are you using?
What all is in the Guinea pig food?

On the hay ... using hay as a bedding is not a real good idea ... chins have to urinate several times a day, every day ... this can set up mold/meldew very quickly and this is not good for the chin. I would suggest putting a hand full of hay off to one side for him to eat ... make sure he has hay at all times, but disgard what is left over at the end of each day and put fresh hay in it's place.
