Hi FluffBall,
Keeping health and quality in mind ... either would be a match that would be acceptable/good ... with me, color would not enter into it (but I already have almost every color) which ever one I could find that would be the best one I could afford to buy that would probably produce the healthiest and strongest kits is what I would go for in the mate.
I've paid as low as $60 for a standard and as high as $350 for a standard gray breeding quality chin. As little as $100 for a beige and as high as $400 for a beige with good breeding quality. It all depends on where you look, the quality of the chinchilla, the demand for that particular color at that time, the background information on the chin and the knowledge of the seller. Sorry, no easy answer.
If you are wanting more of a variety in the colors, I would go with the beige, a very light colored beige that may have come from a homo beige and a standard, come from a white and a standard, or a hetero beige and a standard as one of the parents.

Things still quiet on the home front? Maybe she finally took the hint!
