Doodle has had a slight nose whistle since he fell on his face several months ago. He's been totally fine, so I'm not worried --- it's actually kind of adorable. But I'm wondering: what happened to his nose that was so horrible that this happened?

In all likeliness he broke his nose. I can only speculate as to the specifics but maybe the nasal bone or the cartilage was fractured and changed the shape of the nasal passage. Such things happen in people too with severe nose fractures which is often why nasal splints are used since the septum, or the cartilaginous part in the middle, can become displaced and heal that way. Additionally, as bone fractures heal, there will be calcification around where it heals, which may explain why the whistling didn't occur until later.

It's called a deviated septum.  It can be from a break or a more minor shifting of the cartilage and bones in the nose narrowing one side.  Occasionally humans get surgery to fix this but even in people it's not suggested unless there's a breathing problem.  A good portion of people have deviated septums that cause no problems so I would assume as long as the chin has no trouble breathing when being active it is best to just leave it alone.

He wipes his nose more frequently than he did when he was a baby, but this started months ago. So I'm not panicking.
