I was just wondering what type of chinchilla is worth the most??

Value is typically based on a lot of factors...the chin's color, genetics, and quality.  Typically, more rare colors are more expensive and chins from genetic lines that contain show winners are also more expensive.  I would guess that the sapphire is the rarest mutation, but that's just a guess.

A very high quality Class Champion Show Winner is probably worth the most.  And depending on the buyer, it may actually be a Standard, since introducing Standards into the breeding line is so important.  You have to have the right buyer, seller, and chinchilla to be able to really say what is worth the most.

::silly::Normally, chinchillas are priced according to how rare they are ... and the quality of the chinchilla ...  BUT ... it also depends on supply and demand.

I have seen a standard gray chinchilla go for as little as $35 and as much as $800.  Depends on the quality, availability, breeder and need. 

If it is what you really want, then the price does not matter ... unless you can not afford it ... then you go to the next one in line you can afford. 

Rather blunt, but the truth.
